Halloween Recipe: Jack-O-Lantern Sloppy Joe Pie
Halloween is on a Wednesday, and you're going to need a quick dinner recipe to feed the family before trick-or-treating - try this festive twist on a classic recipe.

For dinner, start with a twist on the classic sloppy Joe with this Jack-O-Latern Sloppy Joe Pie. The recipe originally comes from Taste of Home, but I made a few tweaks of my own.
To make this recipe you'll need:

- 1-1/2 pounds lean ground beef
- 1/2 c. chopped onion
- 2 tsp. all-purpose flour
- 1 c. salsa
- 1/2 c. chili sauce
- 1 c. frozen corn
- 2 tbsp. brown sugar
- 2 sheets of refrigerated pie crust
- 1/2 c. shredded cheese
- 1 egg
In a large skillet, cook the beef and onion over medium heat until the meat is no longer pink; drain the fat. In a small bowl, combine the flour, salsa and chili sauce until blended. Stir it into skillet, then add the corn and brown sugar. Place one pie crust into the bottom of a deep-dish 9-inch pie plate. Fill the pie with the meat mixture and sprikle the top of the filling with cheese. Unroll the second pastry and place over the filling. With a sharp knife, cut out a face to resemble a jack-o-lantern and press the edges of the crusts together. Beat the egg and brush over the pie pastry. Bake the pie at 450 degrees for 9-11 minutes, or until the crust is golden brown and filling is bubbly. Enjoy!
